The Continental Region of the National Association of College & University Food Services (NACUFS) is presenting registered dietitian Brittney Stuard with a President's Award at the 2011 national conference in Dallas.
Brittney currently serves as the Nutrition Committee chair for the NACUFS Continental Region. A noted achievement while fulfilling this role is the creation and coordination of a quarterly electronic nutrition newsletter.
The newsletter, which is disseminated throughout the region and beyond, showcases the expertise of nutrition professionals in higher education and explores nutrition topics important to those dealing with nutritional issues in campus settings.
Here at CSU, Brittney helps students and staff to navigate nutritional needs and concerns. In addition to one-on-one consultations, she offers nutrition and cooking classes, hosts Dine with the Dietitian sessions in all of the dining centers and has established the Eat Well Nutrition Program which features custom-designed labeling and brochures to help students and staff make informed food choices while eating in the dining centers. She also helps to oversee the HACCP and ServSafe food safety programs.
A CSU graduate herself, Brittney’s commitment to campus and the students extends beyond her role as a dietitian. She is the student employment coordinator for Residential Dining Services, and is responsible for student/staff training and instrumental in student employee relationship-building and retention.
Brittney also champions department sustainable initiatives through committee service and event participation. In addition, she partners with other CSU nutrition professionals to support universitywide nutrition goals.
Also of note, Foodservice Director magazine, through its 30Under30 awards, recently recognized Brittney as one of the up-and-coming young stars in university foodservice.
